Kevin Green opened The Butcher Shoppe on Langley in 2007 for one reason: Pensacola deserved a real neighborhood butcher — the kind of shop where somebody actually knows the meat they're selling you and is willing to stand behind it. His son Jordan grew up in the place, sweeping floors before he could see over the block and standing behind it long before most folks get their first real job.
Today they run it side by side. Kevin on one side of the counter, Jordan on the other, both doing the work themselves. No middlemen, no mystery cuts — just two butchers who know the product, know the customers, and sign their name to every cut that leaves the shop.
Nearly twenty years in, they're still the folks Pensacola's food trucks and restaurant kitchens call first — because the cut they got last Tuesday is the same cut they'll get next Tuesday. That's the whole business in one sentence.
